Colour: Pale white gold in colour with fluorescent lime green hues.
Nose: Lifted aromas of freshly cut Granny Smith apples and ripe Tahitian lime. This is
supported by flinty and steely aromas and hints of freshly cooked cheese.
Palate: Alive, fresh, aromatic and dry. The upfront palate displays fruit flavours of
fresh lime juice with pink grapefruit. The mid palate shows characters of
cardamom and chopped basil supported by nuances of elderflower. The back
palate is crisp, clean, dry and soft.
Cellar: 3-5 years.
Food: Smoked fresh oysters with juniper berries, Thai prawn and mango salad, Pork
and pistachio terrine.
